Honey Glazed Corned Beef: An Irish-Inspired Feast for St. Patrick's Day

Celebrate St. Patrick’s Day with a delicious twist on a traditional Irish dish by preparing a Honey Glazed Corned Beef. This recipe infuses the classic corned beef with a sweet and savory honey glaze, giving it a golden crust and a mouthwatering flavor that is sure to impress your family and guests.




Ingredients:

  • 3-4 lbs corned beef brisket

  • 1 large onion, quartered

  • 3 cloves of garlic, minced

  • 2 bay leaves

  • 1 teaspoon black peppercorns

  • 6-8 whole cloves

  • 1/4 cup honey (preferably Waterford Bee Company honey)

  • 2 tablespoons Dijon mustard (you can even use Waterford Bee Company Jalapeno Honey Mustard)

  • 2 tablespoons apple cider vinegar

  • 1 tablespoon brown sugar

  • Fresh parsley, chopped (for garnish)


Instructions:

  1. Prepare the Corned Beef:

    • Rinse the corned beef brisket under cold water to remove any excess salt from the packaging. Place the brisket in a large pot.

    • Add enough water to the pot to fully cover the brisket. Add the quartered onion, minced garlic, bay leaves, black peppercorns, and cloves to the pot.

    • Bring the water to a boil, then reduce the heat to low. Cover the pot and simmer for about 2.5 to 3 hours, or until the meat is tender.

  2. Make the Honey Glaze:

    • In a small bowl, combine the honey, Dijon mustard, apple cider vinegar, and brown sugar. Stir until well mixed.

    • Set aside the glaze for later use.

  3. Glaze and Finish the Corned Beef:

    • Preheat your oven to 350°F (175°C).

    • Once the corned beef is tender, remove it from the pot and place it on a baking tray lined with foil. Pat the surface of the meat dry with paper towels.

    • Generously brush the top and sides of the corned beef with the honey glaze.

    • Place the corned beef in the preheated oven and bake for 20-30 minutes, basting the meat with more glaze halfway through, until the outside is caramelized and a nice crust has formed.

  4. Serve:

    • Remove the corned beef from the oven and let it rest for 10 minutes before slicing. This allows the juices to redistribute throughout the meat, ensuring it is juicy and flavorful.

    • Slice the corned beef against the grain for tenderness.

    • Garnish with fresh parsley and serve warm.
