Honey-Glazed Pork and Butternut Squash Harvest Bowl

As the air turns crisp and leaves start to fall, there’s nothing more comforting than a bowl of warm, nourishing food made from seasonal Wisconsin ingredients. This Honey-Glazed Pork & Farro Harvest Bowl combines the richness of glazed pork with the earthy textures of farro, roasted butternut squash, and kale. It’s topped with a drizzle of Wisconsin Bee Company Wildflower Honey for a sweet finish that pulls it all together.

Ingredients:

For the Honey-Glazed Pork:


For the Roasted Veggies:

  • 2 cups butternut squash, peeled and cubed

  • 1 Tbsp olive oil

  • Salt, pepper, and a pinch of smoked paprika


For the Bowl:

  • 1 cup farro, cooked according to package directions

  • 2 cups kale, chopped (massage with a little olive oil and salt)

  • Optional: Crumbled goat cheese or feta for topping

  • Extra Wisconsin Bee Company Honey for drizzling


Instructions:

1. Marinate & Cook the Pork:

In a small bowl, whisk together honey, mustard, vinegar, olive oil, salt, and pepper. Coat the pork and let it marinate for at least 30 minutes (up to overnight for deeper flavor). Grill or roast the pork at 375°F for about 25–30 minutes, or until internal temp reaches 145°F. Rest and slice.

2. Roast the Butternut Squash:

Toss squash cubes in olive oil, salt, pepper, and smoked paprika. Roast at 400°F for 20–25 minutes until tender and caramelized.

3. Cook the Farro & Prep the Kale:

While the pork and squash cook, prepare your farro. Massage kale with olive oil and a pinch of salt until tender.

4. Assemble the Bowls:

Scoop a generous helping of farro into each bowl. Top with sliced pork, roasted squash, and kale. Add a sprinkle of goat cheese if desired, and finish with a warm drizzle of Wisconsin Bee Company Honey.
